"Tosa Aka cattle (Tosa Brown-haired Japanese Cattle)," raised free-ranging in Kochi Prefecture's mountain areas, is a type of Japan's native breed "Aka cattle," a brand beef characterized by more lean meat and a refreshing umami compared to black-haired Japanese cattle (wagyu). Highly rare, it is attracting attention as a new symbol of Kochi's food culture.
Characteristics of Tosa Aka Cattle
Because Tosa Aka cattle are free-range with lots of exercise, the meat is muscular with abundant lean red flesh. With less fat, the inherent umami of the meat is stronger and healthier. Can be enjoyed in diverse cooking methods including steak, shabu-shabu, and yakiniku, but eating it as "tataki (Tosa style)" is also popular.
