Saga Beef: Branded Wagyu of Kyushu Proud of Softness and Marbling
Saga Beef: Top-Class Branded Japanese Wagyu
Saga beef is a brand name given only to individuals of Japanese Black cattle raised in Saga Prefecture that clear the strictest quality standards (BMS 12 or above, etc.). With a track record of winning the Prime Minister's Award and the Minister of Agriculture, Forestry and Fisheries Award at the National Wagyu Ability Show (held every 5 years) in 2007 and 2012, it is Japan's top-class wagyu brand.
Characteristics of Saga Beef
Saga beef's characteristics are three points: "fine and even marbling," "sweetness and umami of the meat," and "soft texture." The low fat melting point allows enjoyment of a melt-in-the-mouth texture. Top-quality A5-rank Saga beef is rare and can be enjoyed through various cooking methods including yakiniku, steak, and shabu-shabu.
